Special Treat 1: Recipe for Teta Nena’s Posne Krofne (Doughnuts)

This is the traditional snack of our Vrbica Retreats!

Teta Nenine Posne krofne 

 – 1 kg. brašna

– 30 gr. kvasca

– 3 dcl. mlake vode

– 2 dl. kisele vode

– 1 dl. ulja (ili 1 štapić Fleischmanns margarina)

– 2 kašike šećera

– 2 kesice vanil šećera

– narendana kora limuna

– 1 kašičica soli

Duboko ulje za prženje krofni.

U vanglu staviti kvasac, kašiku šećera i kašiku brašna. Dobro izmešati sa malo vode i ostaviti da kvasac nadođe.

Zatim u nadošli kvasac sipati ulje, vodu, kiselu vodu, šećer, narendanu koru limuna i vanil šećer. Zamesiti sa brašnom. Brašno dodavati malo po malo i dodati so. Završiti mešenje i ostaviti da se testo udvostruči.

Testo razvući na brašnom posutu radnu površinu, vaditi kolutiće sa čašom i ostaviti da malo nadođu, oko 15 minuta.

Ulje zagrejati i gornju stranu krofne spuštati okrenutu prema dole. Poklopiti i pržiti oko jedan minut, skloniti poklopac i ostaviti da donja strana još porumeni. Okrenuti i drugu stranu da porumeni.

Vaditi na salvet da se ocede, posuti sa prah šećerom i poslužiti uz džem.

Special Treat 2: Recipe for Cika Milan’s Famous Posno Spaghetti Sauce

This is the traditional dinner of our Vrbica Retreats!

Cika Milan’s Posno Spaghetti Sauce

Ingredients:

  • Olive oil – approximately ¼ – ½ cup
  • Garlic – 1 clove, minced
  • Onion – 1 medium sweet or white, finely diced
  • Prego Traditional Spaghetti Sauce or any posno sauce of your choice – 2 quarts
  • Tuna – one  12 ounce can, chunk light, packed in water, drained
  • Italian seasoning – 1 tablespoon
  • Oregano – 1 tablespoon
  • Salt – 1 teaspoon
  • Black pepper – 1 teaspoon
  • Bay leaves – 2 or 3
  • Brown Sugar – approximately 1 tablespoon or to taste
  • Pasta of your choice. I prefer bow ties, Farfalle, because they are easy to eat, no mess

In a large saucepan or Dutch Oven:

  • Add olive oil and make sure it covers the bottom of the pan
  • Warm the oil, add garlic, stir over low medium heat for about 1 minute
  • Add onions, and sauté until soft
  • Add spaghetti sauce and swish around ¼ cup of water in the sauce jar then add to pot
  • Stir in the Italian seasoning, oregano, salt, black pepper and bay leaves
  • Cook covered over medium to medium high heat and bring to a near boil
  • Add drained tuna stir in, cover pan and simmer for ½ hour, mixing periodically
  • Taste and sprinkle and stir in brown sugar to cut the sour taste to your liking
  • Continue to simmer for another ½ hour
  • ENJOY!

Since most of you are excellent cooks, please feel free to adjust as you wish. I make this sauce without a recipe, just like my mother.
